2020 grantee ($14,000) to EATS Park City implemented and measured outcomes of a One Meal A Day Challenge where participants committed to making just one plant-based meal a day. Paul Hawken’s Project Drawdown notes the number 3 and 4 affecters of climate change to be increasing plant-based meal consumption and the reduction of food waste. The goals of the project were to introduce wasteless meal preparation techniques and to collect data on our community’s food consumption & waste habits. The project is complete and the data can be viewed here. EATS Park City is now looking to scale the project to continue benchmarking goals for thoughtful, climate-friendly consumption behaviors and practices throughout the community.
