When more than 70 of the world’s most celebrated chefs descend on Park City this August for the inaugural Chef’s Table Festival, Park City Community Foundation will be working behind the scenes to make sure their visit leaves the community better than they found it. The Community Foundation is partnering with Chef’s Table to bring food waste diversion to over half of the restaurants participating in the festival, giving visiting chefs a way to live out their own sustainability values even while they’re cooking far from home. 

Many of the chefs coming to Park City have built their careers around reducing waste and honoring the ingredients they work with. This partnership makes sure that ethic doesn’t stop at the kitchen door. Park City Community Foundation is covering the cost of food waste diversion for participating restaurants throughout the festival. For restaurants that want to keep it going, we’re offering nine months of free food waste diversion afterward, the same offer at the center of our new Zero Food Waste business incentive program. It’s a chance to turn one weekend of extraordinary cooking into a lasting habit for Park City’s restaurant community. 

One of those restaurants, Alpinist, will be trying food waste diversion for the first time thanks to this partnership. On August 14, Alpinist will also host an intimate fundraising dinner for our Zero Food Waste initiative, featuring a course each from Chef Inés Páez Nin of Aguají in the Dominican Republic and Chef Jaime Rodríguez of Celele in Cartagena, Colombia. Both chefs have built their restaurants around research, biodiversity, and deep respect for the ingredients and communities they work with, making them a natural fit for an evening in support of Zero Food Waste. 

Since launching in June 2024, residents, businesses, and organizations participating in the Zero Food Waste movement have diverted over 1,000 tons of food waste from the Summit County landfill, working alongside residents, businesses, and now, thanks to this new partnership, some of the best chefs in the world.
